Carrot and Cream Cheese Walnut Cupcakes by Tita Alma Bonifacio

so, these are usually cake-sized but mom recently challenged Tita Alma to bake them in cupcake-sizes! They had a funny and long discussion about it. Tita Alma accepted the challenge and called us up a week later to pick it up. Can I just say that it’s still delicious as ever! I just love the moist carrot cake on the bottom topped with her rich cream cheese with crunchy walnuts. It’s my favourite pastry!
